Big Batch Oven Scrambled Eggs & Breakfast Burritos

I want to share an easy recipe for big batch oven scrambled eggs. These are perfect if you want to make a bunch of breakfast freezer burritos (and it's also a great way to make scrambled eggs when you have company over). 

Recipe: Big Batch Oven Scrambled Eggs

Ingredients:
3 tablespoons butter, melted
24 eggs
2 cups whole milk or half n' half
1/2 cup salsa (mild, medium, or hot)
1-1/2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Directions:
1. Preheat the oven to 350 degrees.
2. Pour the melted butter in a 9x13 dish and make sure all sides of the pan are coated to avoid sticking.
3. Whisk together the eggs and seasonings. Then slowly whisk in the milk and salsa. Pour into baking dish.
4. Bake uncovered for 30-40 minutes (the time can vary depending on on what size pan you use - a smaller dish will require a longer cook time). Make sure to stir the eggs around 15 minutes and then again at 30 minutes. Continue cooking until the eggs are set. I normally pull them out when they are still slightly wet but not runny (as they will continue cooking as they cool and to avoid over cooking). Also, be careful when putting in the oven and stirring - it's easy to spill and make a mess. :)

How many burritos will this yield? It will depend on what size flour tortillas you use and how many additional fillings but I typically use 8" flour tortillas and allow for about 1-1/2 to 2 eggs per burrito - so this big batch recipe will yield 12-16 burritos. You can use low carb or whole wheat tortillas to make them a bit healthier!

The sky is the limit as far as customizing your burritos! You can add additional protein (bacon, sausage, ham), veggies, different cheeses, diced or shredded potatoes, or do a mexican version with chorizo or spicy breakfast sausage, green chilies and black beans. Make sure all of the ingredients are fully cooled before assembling your burritos (to avoid freezer burn). Wrap them in plastic wrap and/or foil.

Re-heating instructions: you can reheat the burritos in the microwave directly from the freezer. Remove the plastic wrap, place on a microwave safe dish, and heat for 1-2 minutes. You can also re-heat them in the oven if desired (preferably wrapped in foil).

Pro tip: I personally love to bake my bacon, potatoes, and sausage links in the oven for hands off ease of cooking. I normally dice up the sausage links after baking and add them to the burritos. When doing bacon in the oven, I recommend THICK bacon only, line the baking sheet with foil, then place an oven-safe baking rack on top of the foil, spray the rack with cooking spray, and then lay the bacon on the rack (that way it won't stick and won't cook in a bunch of grease).
