Prep 5 Chicken Freezer Meals in 30 Minutes!

Here are 5 easy chicken recipes that you can prep for your freezer in only 30 minutes (recipes and complete grocery list below)!

I recommend labeling the freezer bags before you add the ingredients to them. I normally use a Sharpie marker (easy and cheap) and write the recipe name, date, cooking instructions, and additional cook day ingredients (if applicable).

1) Easy Italian Baked Chicken

Serves 4-6; Supplies needed: 2 gallon size freezer bags, 1 quart size freezer bag

Prep Day Ingredients:
1-1/2 to 2 lbs boneless skinless chicken breasts (approx. 4-6 chicken breasts)
3/4 cup of your favorite Italian dressing
1/3 cup grated Parmesan cheese
 
Prep Instructions:
1. Place the chicken and Italian dressing in a gallon size freezer bag. Seal (making sure to squeeze out as much air as possible).
2. Place the parmesan cheese in a quart size freezer bag and seal.
3. Place the bag of chicken/dressing and bag of parmesan cheese into another gallon size freezer bag (double bag). Lay flat in freezer.
 
Cooking Instructions: Thaw the bag completely in refrigerator.  Preheat oven to 350 degrees. Spray a baking sheet with cooking spray and place the chicken on the baking sheet and sprinkle with the parmesan cheese. Bake for 35-45 minutes or until chicken is cooked through and no longer pink. 
 
2) BBQ Bacon Cheddar Chicken
Serves 4-6; Supplies needed: 2 gallon size freezer bags, 1 quart size freezer bag
 
Prep Day Ingredients:
1-1/2 to 2 lbs boneless, skinless chicken breasts
1-1/2 cups of your favorite BBQ sauce
1 cup shredded cheddar cheese
1/3 cup cooked bacon pieces (pre-packaged or you can cook and crumble your own; use turkey bacon, etc.) 
 
Prep Instructions:
1. Place the chicken and BBQ sauce in a gallon size freezer bag. Seal the bag.
2. Add the cheddar cheese and bacon to a quart size freezer bag. Seal the bag.
3. Place the bag of chicken and the bag of cheese/bacon into another gallon size freezer bag (double bag). 
 
Cooking instructions: Thaw the bag completely in the refrigerator. Place the chicken and BBQ sauce in your crockpot. Cook on low for 4-5 hours or until chicken is cooked through. Break up the chicken slightly and stir. Sprinkle the cheddar cheese and bacon on top. Cover with lid and cook 15-20 more minutes or until the cheese is melted. Note: this is also good shredded and served on sandwich buns.
 
3) Lemon Chicken
Serves 4-6; Supplies needed: 2 gallon size freezer bags
 
Prep Day Ingredients:
2-4 lbs chicken drumsticks (or thighs or whole cut up chicken)
2 tablespoons lemon zest
Juice of 3 lemons
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon paprika
 
Cook Day Ingredients:

2 tablespoons butter, melted

Prep Day Instructions:

1. Add all of the prep day ingredients to a gallon size freezer bag. Seal the bag and then double bag in another gallon size freezer bag. Place in freezer.

Cooking Instructions: Thaw the bag completely in the refrigerator. Place the contents of the bag in the crockpot and cook on low for 6-8 hours or until the chicken is cooked through and tender. Preheat the oven to BROIL. Place the chicken on a baking sheet (line with foil and spray with cooking spray). Brush the chicken with melted butter all over and broil on each side until the skin crisps up.

Shredded Ranch Chicken Tacos
Serves 4-6; Supplies needed: 2 gallon size freezer bags
 
Prep Day Ingredients:
1-1/2 to 2 lbs boneless, skinless chicken breasts
1 cup of salsa
1 package dry ranch seasoning mix (or homemade ranch seasoning mix)
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
 
Cook Day Ingredients:
Taco Shells (hard or soft)
Taco Toppings
 
Prep Instructions:
1. Add all of the prep day ingredients to a gallon size freezer bag. Massage the bag to mix up the ingredients well. Seal the bag and then double bag in another gallon size freezer bag. Place in freezer.
 
Cooking instructions: Thaw the bag completely in the refrigerator. Place the contents of the bag in your crockpot and cook on low for 4-6 hours or until chicken is cooked through. Shred the chicken with two forks. Serve on taco shells with desired toppings. Note: if chicken is really juicy, I like to broil the shredded chicken on a baking sheet to crisp up the chicken a little bit and avoid soggy tacos. Note: you can replace the last 5 dry spices with a package of taco seasoning if preferred.
 
Cilantro Lime Chicken (with corn and black beans)
Serves 4-6; Supplies needed: 2 gallon size freezer bags
 
Prep Day Ingredients:
1-1/2 to 2 lbs boneless skinless chicken breasts
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon salt 
1/2 teaspoon pepper
15 oz can black beans, drained and rinsed
15 oz can corn, drained
1/2 cup chicken broth
Zest and juice of 2 limes
1/4 cup fresh chopped cilantro
 
Prep Instructions:
1. Add the chicken to a gallon size freezer bag. Sprinkle the chicken with the dry spices and then add the remaining ingredients to the bag. Seal the bag and place in another gallon size freezer bag (double bag). Lay flat in freezer.
 
Cooking instructions: Thaw bag completely in refrigerator. Place contents of bag in your crockpot. Cook on low for 6-7 hours or until chicken is cooked through and tender. Break up the chicken slightly and stir well. Note: This is great over rice or cauliflower rice (for a burrito bowl) or shred and serve on tacos.
